J-Easy’s Excellent Enchiladas


I love to use what I have around the house to throw together a quick and easy meal.  We decided we wanted enchilada’s, but didn’t want just plain chicken or cheese, so I created a mixture of both.  They were excellent – even better the next day. Enjoy!


  • Taco size flour tortilla’s (white or wheat)
  • 1 container fat free Sour Cream
  • 1 can of white chunk chicken breast
  • 1 package low-fat shredded cheese 
  • 1 package taco seasoning
  • 1 small jar taco sauce
  • 1 can green chili, diced
  • 1 – 2 cans enchilada sauce (I prefer green and Husband prefers red, so I use one can of each.)


Preheat oven to 350.

Lightly spray glass baking dish with nonstick cooking spray.  

Mix chicken, 1.5 cups of cheese*, sour cream, taco seasoning, taco sauce and green chili in a medium bowl.  Place  about 2 heaping Tbsp. of chicken mixture on one side of a tortilla, roll to cover. (Fill based on your preference, you can make small enchilada’s that are more like taquito’s or larger burrito style.)  

Place rolled tortillas in baking dish.  Top with enchilada sauce and sprinkle remaining cheese on top.   

Bake 25 minutes uncovered.

*For healthier version, use less cheese, or mix fat free with low fat cheese.
