Stuffed Bell Peppers

Man oh man! I KNEW there was a reason I had been having a year long aching to make stuffed bell peppers. I remember having these once before, that my mom made, and loving them [I’m sure we had them more than once though…I was probably just to picky to eat them].

Tonight I started a recipe from Mandy  and made a few tweaks too it. My boyfriend, Adam, gave them the stamp of approval. Here’s what I did:

Ingredients

  • 4 Green Bell Peppers
  • 1 lb Ground Beef [Lean]
  • 1 White Onion
  • 1 pkg Uncle Ben’s 90-second Spanish Style Rice
  • Cumin
  • Black Pepper
  • Tomato Paste
  • Optional: Salsa, Freshly Grated Baby Cheddar

Directions

  1. Clean and “empty” bell peppers. Set aside in baking dish.
  2. Preheat oven to 350.
  3. Brown the meat in a skillet.
  4. Add diced onions and cook until clear.
  5. Add rice and 2 tbsp water. Cook until rice is heated through.
  6. Add 4 pinches of cumin and 2 dashes of black pepper.
  7. Gradually add tomato paste until everything just begins to stick together.
  8. Add additional cumin and pepper until seasoned to your liking.
  9. Spoon into peppers and cook for 30 minutes.
  10. Take out and top with cheese. Cook for an additional 5 minutes or until cheese is bubbly.
  11. Top with salsa and serve.

    3. I made some last night and they were awesome! I only made two since Nate is out of town. I used orange peppers and added some canned green chiles and some taco seasoning, and used shredded 2% cheddar cheese — they were awesome!!
