Turkey Slop!

Ok, I know what you’re thinking. It’s been a while since I’ve posted. And honestly? It’s been a while since I’ve spent quality time in my kitchen. I blame it on grad school.
Anyway, today I had a hankering to cook something up and remembered a recipe on Ross Mathews’ blog. It was pretty much a [...]

Vegetable Soup

Nothing says fall like preparing a big pot of soup or chili after work. Last night was soup, vegetable soup to be exact. Mandy helped me determine what to include over IM that afternoon and I did the rest. It turned out great and was quick to prep! Here’s my yummy Vegetable Soup recipe, enjoy!

Deconstructed Kabobs

Over the weekend I was craving grilled chicken kabobs, but didn’t have access to a grill and went to bed with an unfulfilled craving. Monday morning, on my way to work, I had an A-HA [Take On Me, Take Me On] moment. I’d “deconstruct” the “perfect kabobs” I created in my head the day before [...]

Blueberry mini-pies

I was looking for something to make for my husband’s birthday – and that is tricky because he doesn’t prefer your traditional birthday cake.  Growing up he always asked for a pudding dessert, which is his mom’s special treat to him.  I’ve always known his favorite pie is blueberry, but he’s never really asked for [...]

Bruschetta

One of my first “experiments” in the kitchen, several years ago, was Bruschetta. It turned out to be a huge hit and is something that friends beg me to make. Of course, I always oblige, because I can’t eat enough of it. On toasted baguette slices, atop pasta, by itself. Nom Nom Nom! It’s fresh, [...]

J-Easy’s Excellent Enchiladas

I love to use what I have around the house to throw together a quick and easy meal.  We decided we wanted enchilada’s, but didn’t want just plain chicken or cheese, so I created a mixture of both.  They were excellent – even better the next day. Enjoy!
Ingredients:

Taco size flour tortilla’s (white or wheat)
1 container [...]

Shelia’s Spiked Shower Punch by Megan

My friend, Shelia, wanted to mix a new cocktail reminiscent of shower punch. She had the idea and I figured out the mixology. It turned out so good and, of course, I took one for the blog, perfecting it and trying different sherbets in it. I don’t have a favorite sherbet out of the ones [...]

Stuffed Bell Peppers

Man oh man! I KNEW there was a reason I had been having a year long aching to make stuffed bell peppers. I remember having these once before, that my mom made, and loving them [I'm sure we had them more than once though...I was probably just to picky to eat them].
Tonight I started a recipe [...]

Whole Wheat Pasta Salad

I love this pasta salad recipe from my Grandma, I’ve changed it up a little bit.  It’s low in fat and nice and light and perfect for this time of year!
Whole Wheat Pasta Salad
Dressing:

3 Tbsp white vinegar
2 – 4 Tbsp light or fat free mayo
1 tbsp honey
1 section of garlic clove, chopped
1 tsp dill
¼ teaspoon [...]

Easter Cake Balls

I am absolutely in love with Cake Balls. The perfect size and super easy to make, plus they are sure to impress at any gathering!
I use Bakerella’s recipe, but here’s a brief rundown of it:

Prepare your favorite box cake mix as directed on the box.
Once cooked, and cooled, crumble into a large mixing bowl.
Plop [yep, [...]
