Here is one of my favorite coffee cake recipes! The topping is amazing. My mom made this growing up, it’s a little different than most coffee cakes I’ve tried – you must try!
Topping
- 1/2 Cup brown sugar, packed
- 4 tablespons graham cracker crumbs
- 1 tablespoon orange rind
- 1/2 cup coarsely chopped nuts
- 2 tablespoons melted butter or margarine
- 1 1/2 teaspoons cinnamon
Take 1 package of yellow cake mix and add 1 tablespoon grated orange rind or use the following.
Cake recipe
- 2 cups sifted cake flour
- 1 1/3 cups granulated sugar
- 2 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 cup shortening (crisco)
- 2/3 cup milk
- 1 1/2 teaspoons vanilla
- 2 eggs
- 1/4 cup milk
Instructions:
- Preheat oven to 325.
- Sift together dry ingredients.
- Add shortening, 2/3 c. milk, and vanilla.
- Beat on low until flour is blended, then on medium speed for 2 minutes, scraping the bowl.
- Add eggs and 1/4 c. milk to batter. Beat 2 minutes longer, scraping bowl.
- Bake for about 20 minutes. Watch closely, top should be moist but not sticky.
- Quickly sprinkle the topping evenly over cake. Bake for 10 more minutes to set.
- Serve and enjoy!
